Okay, so I decided to make meatloaf for dinner tonight, BUT I do not have any ketchup (which I like to put on top of my meatloaf) SOOOO… I made my own and it is absolutely awesome. Just stuff I had around the house
Took six older tomatoes – still good, but older
1/2 bell pepper (you can use jalapeno if you want to)
3 cloves garlic
1/4 cup packed brown sugar
1 tbsp Worchester Sauce
2 tbsp Olive Oil
3 sprigs basil with the stems
Salt to taste
Pepper to taste
1/4 cup cider vinegar
1 tsp allspice
2 tbsp tomato paste
Okay, so seed the tomatoes and throw into a blender – puree them
put these in a pan on very low heat
Back to the blender with the bell pepper, onion, garlic, basil – puree these then
add to tomatoes still on low heat
Add the rest of the ingredients and slowly bring to almost a boil. Turn down and simmer. Keep tasting to adjust the spices.
All together cook over low heat for about 1/2 an hour. Turn off and let cool down.
Once it has cooled, blend again using a stick blender (immersion blender) until it is smooth!
Voila! Ketchup – believe me it is awesome!!!!!
